B Is For Bad Botchulism

 I did it! I canned for the first time by myself! This was a long time coming but a fear of doing something wrong and sending my whole family to the ER, had to be conquered. I am a little high strung when it comes to things that are detail oriented like canning. I was a bit of a mess, I must admit. Referring to 3 canning/preserving books double checking all my steps. I had a thermometer to check temps. I recently took a preserving class through the local college with a dear friend, even then I was still nervous. In the end it turned out fine. I made an apricot chutney to go with Indian food or poultry. I know this will get easier and I won't be so worried next time. I think my canner and I will become good friends this summer. Peaches and apples here I come.
